Biscozyme is micro granulated balanced blend of enzymes used in the production of biscuits and crackers to moderately soften the wheat gluten of flour. It is mainly employed to confectionaries flour which requires low protein content and is more suitable for products such as muffins, cakes, biscuits etc. The enzymatic action of Biscozyme produces a cell structure that provides Smooth surface, influences chewing texture, increases browning and friability.

DESCRIPTION Biscozyme is a light brown, free-flowing, non-dusting Powder.

INGREDIENTS Flour improver (INS 1100, 920, 471 ).

DOSAGE 8 - 30 grams / 100 kg of flour (Depending upon the quality of flour)
