South Indian Paratha made of Maida faces problems like hardness, breakage, texture problem. It is recommended to use P-10 which helps to overcome such problems.

By adding P – 10 to the Maida flour, it improves the machinability of dough & reduces the stability of Gluten. This in turn improves the elasticity of dough by clearing the disulfide linkage of protein molecule. It also reduces the thickness and improves the extensibility of non-tearing products like Parathas & Indian Bread made from Maida giving the Special softness known as “MALLIGE” effect.

DESCRIPTION P-10 is Cream coloured free flowing powder.

DOSAGE 5 – 15 grams / 100 kg flour (Depending upon the quality of flour)
