The quality of Maida greatly influences the quality of the final product. Flour used in bun & Pav should have high protein content, low ash, high sedimentation value & high water absorption. Flours are normally treated with improvers depending on the end use.
PAVET strengthens the gluten and makes it more malleable so that the cells formed within the bun can stretch easily without tearing. This results in better gas retention and increased bun / Pav volume.
