Puff UP improves the machinability of dough & reduces the stability of Gluten. This in turn improves the elasticity of dough by clearing the disulfide linkage of protein molecule. It also reduces the hardness and improves the extensibility of non-tearing products like parathas, Kharis & Puffs made from all purpose flour/ maida.

The striking features of Puff UP is that it makes the dough to relax and can be expanded into thin layers as Sheeting plays a vital role in many bakery products.
